Calabacitas

Stovetop:  Remove the calabacitas to a saucepan or pot. Over medium heat, warm the stew gently until the sauce loosens. Reduce to low heat and stir gently with a silicone spatula or wooden spoon until the squash is warmed through, about 5 minutes. Sprinkle the porcini breadcrumbs over.

Microwave: Create a steam vent by opening the lid but leaving it ajar. Microwave on medium power for approximately two minutes, stirring the contents top to bottom. If necessary, return the container to the microwave for another two minutes, depending on your appliance.


Mole de Pollo

Stovetop:  Remove the tinga to a saucepan or pot. Over medium heat, warm the tinga gently until the sauce loosens. Reduce to low heat and stir gently with a silicone spatula or wooden spoon until the meat is warmed through, about 5 minutes.

Microwave: Create a steam vent by opening the lid but leaving it ajar. Microwave on medium power for approximately two minutes, stirring the contents top to bottom. If necessary, return the container to the microwave for another two minutes, depending on your appliance.


Chile Verde 

Stovetop:  Over medium heat, cook the stew gently in a covered saucepan, until the sauce loosens. Warm slowly with a silicone spatula or wooden spoon, stirring often to avoid scorching, until the meat is warmed through.

Microwave: Create a steam vent by opening the lid but leaving the lid on and ajar. Microwave on medium power for approximately two minutes, stirring the contents top to bottom. If necessary, return the container to the microwave for another minute or more.


Carne Asada

Your steak is packaged grilled to rare. To complete: Preheat your oven to 400° F (convection)/450° F (still air) or your oven broiler to LOW. Alternatively, prepare a hot BBQ grill.  Remove the foil packet from the container and place onto an oven-proof pan or onto the grill rack. Close the door or lid and cook for approx.10-13 minutes (medium-rare) to 14-17 minutes (medium-well). *Your oven, broiler, or grill may require more or less cooking time. Do not leave unattended and take care to heat the food did through while finishing the steak to your liking.

Whole Beans & Refried Beans

Stovetop: Over medium heat, cook the beans gently in a covered saucepan, along with a splash of water. Warm slowly with a silicone spatula or wooden spoon, stirring often to avoid scorching. 

Microwave: Create a steam vent by opening the lid but leaving the lid on and ajar. Microwave on medium power for approximately two minutes, stirring the contents top to bottom. If necessary, return the container to the microwave for another minute or more.


Oregano Rice

Stovetop: Prepare a pot large enough to hold the bag of rice and about twice as much water and bring the water to a boil. Reduce to a gentle simmer, and drop in the sealed bag of rice. The rice will warm gently and evenly in about 8-10 minutes. Once heated, remove to a bowl and fluff with a fork before serving.

Microwave: Create a steam vent by cutting a corner of the bag, allowing access to the air. Microwave on medium power for approximately two minutes, stirring the contents top to bottom. If necessary, return the container to the microwave for another minute or more.

Tortillas

Stovetop: Prepare a flat, heavy-bottomed pan by greasing it lightly with neutral oil, such as canola or another vegetable oil. (Lard or another animal fat, would also be nice.) Heat the pan over medium-high heat.  

Lightly re-moisten one side of each tortilla, by dabbing them with a clean, wet paper towel, by spraying with clean water, or by dipping, or some other method that works for you.

Cook dry side down for about 30-45 second then flip to the moistened side to finish warming through, no more than another 30 seconds. Hold the tortillas warm in a covered container lined with a clean cloth until just before serving. 

Masa

Refrigerate immediately and keep covered. Use within 2-3 days, removing from the refrigerator only what you need. Keep your masa from drying while working, by covering with a clean, damp cloth. One pound of masa will yield 6-12 tortillas, depending on your desired size.
